Serves 4 | Prep: 15 min | Cook: 30 min

Veal Scallopini

* 8 thin veal cutlets
* 1 cup breadcrumbs
* 2 eggs
* ¼ cup flour
* Salt + pepper
* ½ tsp Italian seasoning
* Olive oil, for frying
* Lemon wedges

Spring Caesar

* 2 heads romaine, chopped
* 1 cup snap peas, sliced
* 3–4 watermelon radishes, shaved
* 1 cucumber, sliced

Basil Caesar Dressing

* 1 cup basil
* 1 garlic clove
* 2 anchovy fillets
* 1 egg yolk
* 2 tbsp lemon juice
* 1 tsp Dijon
* ⅓ cup olive oil
* Salt + pepper
* ⅓ cup parmesan

Toasted Breadcrumbs

* ½ cup breadcrumbs
* 1–2 tbsp olive oil
* Pinch salt
* ½ tsp Italian seasoning

Instructions

1. Toast breadcrumbs in olive oil with salt and Italian seasoning until golden, 3–5 minutes. Set aside.
2. Blend all dressing ingredients except parmesan until smooth. Stir in parmesan.
3. Season veal with salt and pepper. Dredge in flour, egg, then seasoned breadcrumbs.
4. Fry in olive oil over medium heat for 2–3 minutes per side until golden and crisp. Finish with lemon juice and a pinch of salt.
5. Toss romaine, snap peas, radishes, and cucumber with dressing.
6. Plate veal, top with salad, toasted breadcrumbs, and extra parmesan if desired.
