Pesto
- 3 cups packed fresh basil
- ½ cup olive oil
- 1 teaspoon salt
- 2 cloves of garlic
- 2 tablespoons lemon juice
- ¼ cup raw pine nuts
- ¼ cup grated Parmigiano Reggiano cheese

Pasta Salad
- 1 lb rotini
- 1 cup grape tomatoes, halved
- ½ cup pitted and halved Castelvetrano olives
- ¼ red onion, sliced thin
- ½ cup artichoke hearts, chopped
- 1 cup pesto combined with ¼ cup pasta water
