Oh I just get so excited when I see gorgeous asparagus starting to show its face in the grocery stores this time of year.  Pair some seasonal spears with some tomatoes and cheese  and you have ingredients that shine in this simple yet so impressive puff pastry tart!  It’s perfect for breakfast or brunch or cut up small as an appetizer. It’s easy and quick to prepare and always a hit! 
I used mozzarella cheese and Parmesan as the base of the tart, but you can easily use Gruyère, fontina or spread the base instead with ricotta, or Boursin cheese.  The possibilities are endless!

**And before you ask about the stems, they are purely there for aesthetic reasons.  I don’t often find them in the store with the stems on but when I do, I keep them attached because I find them beautiful 🤷🏻‍♀️ I simply lift them off before serving.  I was an art major in college, used to teach art… Food is one big art project to me😉… stems and all🍅

Asparagus Tomato Tart

1 sheet frozen puff pastry (from a 17.3-oz pkg.), thawed

Cherry tomatoes and one bunch of asparagus (stems trimmed) 
Olive oil, salt and pepper 

1 1/2 cup shredded mozzarella 
1/3 cup grated Parmesan 
1 tsp Fresh thyme 
Egg wash (1 egg beaten with 1 tbls water)

Heat oven to 425°F
Use a rolling pin, gently roll the puff pastry to an 11”x14” rectangle, then transfer to the parchment lined baking sheet. Lightly score a 1” border around the rectangle being careful not to cut through. Using a fork, prick the inside of puff pastry.
Brush the outside border with egg wash. Spread the cheese evenly on the inside of the tart.  Lightly toss the asparagus and tomatoes with a drizzle of olive oil and season with salt and pepper. Arrange on top of the cheese in any pattern you want.  Sprinkle with thyme and season with more pepper. 
Bake for 20-25 minutes or until the crust is golden brown and puffy.
