Ingredients: Drop Biscuits: - 3 cups (about 12 oz.) soft-wheat self-rising flour (such as White Lily) - 1/4 cup granulated sugar - 1/2 tsp. kosher salt - 6 Tbsp. (3 oz.) cold unsalted butter, cut into small pieces - 1/4 cup cold vegetable shortening - 1 cup cold whole buttermilk - 1 Tbsp. unsalted butter, melted - Sparkling or demerara sugar Trifle: - 2 lb. fresh strawberries, hulled and quartered (about 6 cups) - 1/2 cup granulated sugar - 1 tsp. grated lemon zest, plus 1 Tbsp. fresh juice (from 1 medium lemon), divided - 1/2 tsp. kosher salt, divided - 4 oz. cream cheese, at room temperature - 1 1/2 tsp. vanilla extract - 3 cups heavy whipping cream - Fresh strawberries Directions: 1. Prepare the Drop Biscuits: Preheat oven to 450°F. Line a large baking sheet with parchment paper. Stir together flour, sugar, and salt in a large bowl. Add butter and shortening; cut into flour mixture with a pastry blender until mixture resembles coarse crumbs with some pea-size pieces remaining. 2. Add buttermilk to flour mixture, stirring just until a shaggy dough forms. Using a scoop or 2 spoons, drop 1/4 cup portions of dough onto prepared baking sheet about 2 inches apart. Spread one-third (scant 2 cups) of the whipped cream mixture over strawberries. Repeat layers twice, ending with whipped cream mixture.
