## Caption

Make these TERIYAKI SALMON BOWLS if you love salmon and need dinner done in 30 minutes! The bowls are filled with flavorful glazed salmon, rice, and a fresh Asian cucumber salad. Such a good high protein dinner idea for busy nights!

Ingredients:

For the Salmon:

* 1½ lbs salmon, cut into bite-size pieces
* ⅓ cup soy sauce
* 2 tbsp rice vinegar
* 3 tbsp brown sugar
* 1 tbsp honey
* juice from ½ lime
* 2 tsp sesame oil
* 1 tsp sesame seeds
* 2 garlic cloves, grated
* ½ tsp ground ginger
* ¼ cup water
* 1½ tsp cornstarch

For the Rice:

* 1½ cups sushi rice

For the Asian Cucumber Salad:

* 1 English cucumber, thinly sliced
* 1 cup shredded carrots
* ¼ cup green onions
* 2 garlic cloves, grated
* 1½ tsp sesame seeds

For the Dressing:

* ¼ cup soy sauce
* 2 tbsp rice vinegar
* 2 tsp honey
* 2 tsp sesame oil
* pinch of red pepper flakes

Directions:

1. In a bowl, mix together the soy sauce, rice vinegar, brown sugar, honey, lime juice, sesame oil, sesame seeds, garlic, and ginger.
2. In a small bowl, whisk together the water and cornstarch until smooth, then add it into the marinade. Add the salmon and let it marinate while the rice cooks.
3. Cook the sushi rice according to package instructions.
4. In another bowl, combine the cucumber, shredded carrots, green onions, garlic, and sesame seeds.
5. To it add the soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes. Toss together.
6. Heat a skillet over medium-high heat with a little oil. Cook the salmon (without sauce first) for 2–3 minutes per side until golden and cooked through. Remove the salmon from the skillet.
7. Pour the teriyaki sauce into the same skillet and let it simmer for 2–3 minutes until slightly thickened. Add the salmon back in and toss to coat.
8. Assemble the bowls with sushi rice, teriyaki salmon, and the cucumber salad. Top with extra sesame seeds, avocado, or spicy mayo if desired.
