## Caption

This ITALIAN ANTIPASTO PASTA SALAD is loaded with salami, pepperoni, olives, mozzarella, artichokes, parmesan, and tossed in a homemade Italian vinaigrette. It’s the perfect summer pasta salad for BBQs, potlucks, meal prep, or an easy side dish everyone will love.

Ingredients:
• 1 lb pasta, cooked
• 10 oz cherry tomatoes, halved
• 5 oz dry salami, sliced into strips
• 5 oz pepperoni, sliced into strips
• ¾ cup pitted kalamata olives, halved
• ¾ cup pitted green olives, halved
• 8 oz mozzarella pearls
• 14 oz canned artichoke hearts, drained and roughly chopped
• 1 large shallot, finely chopped
• ½ cup grated parmesan cheese
• ⅓ cup freshly chopped parsley

For the Homemade Italian Vinaigrette:
• ¾ cup olive oil
• ¼ cup red wine vinegar
• Juice of 1 lemon
• 2 garlic cloves, grated
• 2 tsp Dijon mustard
• 1½ tsp dried oregano
• 1 tsp sugar
• 1 tsp salt
• ½tsp black pepper

Directions:

1. Cook the pasta according to package instructions. Rinse under cold water until completely cooled, then drain well.
2. Add the pasta to a large bowl along with the cherry tomatoes, salami, pepperoni, olives, mozzarella pearls, artichoke hearts, shallot, parmesan cheese, and parsley.
3. In a separate bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, garlic, Dijon mustard, oregano, sugar, salt, and black pepper.
4. Pour the vinaigrette over the pasta salad and toss until everything is evenly coated. Taste and adjust with more salt or black pepper if needed.
5. Serve immediately or refrigerate before serving for even more flavor.
