These orange olive oil muffins are packed with vitamin C, which feels fitting, because somewhere in my 40s, I started realizing my skin needed a little extra support too thanks to perimenopause. Blender Olive Oil Muffins
Makes 9 muffins
1 large naval orange, quartered, seeds removed
4 eggs
1/3 cup olive oil
3 tsp vanilla extract 
1/2 cup fat free greek yogurt
1 cup granulated monk fruit (or cane sugar)
1 3/4 cups gluten free 1:1 flour
1 tsp baking soda
1/2 tsp sea salt
Optional glaze: 1 cup powdered monkfruit (or powdered sugar) + 2 tb orange juice, whisked until smooth

Preheat oven to 350F. In a blender, add the orange, eggs, olive oil, vanilla, yogurt, and monk fruit. Blend until smooth. Add in the flour and baking soda. Gently pulse until incorporated, do not over mix. Add 9 liners to a muffin tray and spray with non stick spray. Divide batter among muffin cups. Bake 26-27 minutes or until a toothpick comes out clean. Let cool. If making the glaze, drizzle desired amount on top and enjoy!
