Mung bean sprouts are my go-to high-protein, high-fiber, nutrient-dense addition to everyday meals. They’re naturally rich in plant-based protein, gut-friendly fiber, and essential vitamins—plus they have a mild, slightly sweet taste. Add them to chaats, pani puri, salads, or simply sauté for a quick healthy boost.

Homemade sprouts are fresher, cleaner, and more budget-friendly. Store-bought ones in the USA are often treated to increase shelf life, so making them at home is a better, more wholesome option.

Ingredients
1 cup mung beans
3 cups water

Directions
🌱 Add mung beans to a wide bowl
🌱 Rub and rinse 3–4 times
🌱 Add enough water to fully soak, cover, and leave for 10 hours
🌱 Next day, drain the water and keep in the same container, covered, for 1 day (slightly moist is fine)
🌱 After 1 day, you’ll see sprouts forming
🌱 For longer sprouts, keep in a warm place (away from sunlight)
🌱 Rinse and repeat for another day if needed
🌱 Use fresh or refrigerate for 4–5 days
