Warabi mochi is a traditional Japanese sweet made with warabi-ko (a type of starch) then topped with roasted soybean flour, but in this case the chef used freshly stone-ground matcha. The texture is very soft and jelly like!

This was the dessert course at a wagyu omakase experience.
