* 1 tsp vanilla

Coconut Mango Cream
* 4 oz mascarpone
* 1½ cups cold heavy cream
* 3 tbsp powdered sugar
* 3 tbsp condensed milk
* 2 tbsp coconut cream
* 1 tsp vanilla
* pinch salt
* 1 mango, diced small

Sticky Rice Layer
* 2 cups Thai sweet rice
* 1 cup coconut milk
* 3 tbsp condensed milk
* 2 tbsp sugar
* pinch salt

Coconut Drizzle
* ½ cup coconut milk
* 2 tbsp condensed milk
* pinch salt

Topping
* 1–2 mangoes, cubed

RECIPE
1. Fill a pot with a few inches of water and bring to a simmer.
2. Place rice into a metal strainer or steamer basket above the water.
3. Cover and steam for 30–40 minutes, stirring once or twice.
4. Heat, 1 cup coconut milk, 3 tbsp condensed milk, 2 tbsp sugar, pinch salt and mix into warm rice.
5. Press rice into a parchment-lined 10-inch circle about ½ inch thick. Place in the fridge to chill.
6. Preheat the oven to 350°F. And line two 10-inch cake pans with parchment.
7. In one bowl mix dry ingredients: flour, cornstarch, baking powder, salt.
8. And in another bowl, mix wet ingredients: egg yolks, ¾ cup sugar, oil, coconut milk, milk, vanilla.
9. Mix wet and dry together.
10. In a separate bowl whip egg whites with remaining ¼ cup sugar until medium peaks form.
11. Fold egg whites gently into batter.
12. Divide into both pans and bake for 22–28 minutes.
13. Cool completely and make the chantilly coconut cream.
14. Whip together: mascarpone, heavy cream, powdered sugar, condensed milk, coconut cream, vanilla, salt. Whip until fluffy. Fold in diced mango. Keep cold.
15. Make Coconut sauce by warming up, ½ cup coconut milk, 2 tbsp condensed milk, a pinch salt until smooth.
16. Assemble cake by placing the first cake layer down, spread thin layer of cream, add second cake layer, frost outside lightly, place cooled down sticky rice layer on top, drizzle coconut sauce and top with fresh mango cubes.
17. Chill 30 minutes before slicing.
