Chebakia Bouchnikha - A delicate, honey-soaked Moroccan pastry made with milk, traditionally enjoyed during Ramadan but perfect for any time of year.  To all observing Ramadan, Ramadan Mubarak! 🌙  Here’s how to make Chebakia Bouchnikha at home:  For the Dough: 500g all-purpose flour 1t ground cinnamon 1t ground anise  4g baking powder 4g vanilla sugar  1/2t salt  125g very soft butter 200ml warm milk 2T orange blossom water 1T vinegar  For Frying & Coating: Vegetable oil, for frying 900g honey, warmed mixed with 2t of orange blossom water  Sliced Almonds or Toasted Sesame for Garnish  In a large bowl, combine dry ingredients.  Add butter and mix until well incorporated.  Add orange blossom water, vinegar and half of the milk.  Mix to combine.  Add the remaining milk little by little until the dough comes together and is soft but not sticky - you may not need all of the milk. Knead for 10 minutes until the dough is very soft and pliable.  Roll into a log and cut into 5 even sections.  Form each section into a ball and let rest, covered for 30 minutes.  Once the dough has rested, flour a work surface and roll out the dough until about 1/4 inch thick.  Pass through a pasta roller to flatten before passing it through a spaghetti cutter. Shape pastries as pictured in the videos by pinching together the individual stands of dough and cutting them into individual pastries. Heat oil to 360 degrees and fry in batches until lightly golden.  Remove and immediately drop into honey.  Let soak for 10-15 minutes to allow honey to absorb. Place bouchnikha in a strainer basket that’s set over a bowl to drain.  Garnish with sliced almonds or toasted sesame and enjoy!
