What an incredible evening at PlatformbyJBF celebrating eatthairice -- Thai Rice: A Journey Beyond Borders," where an elite lineup of chefs and mixologists truly redefined the culinary potential of Thai Hom Mali rice.

 From innovative savory courses to creative rice-infused cocktails, we were treated to a masterful showcase of tradition meeting modern global flavor. 

Huge thanks to the Thai Trade Center New York and our amazing culinary talent for crafting an unforgettable, delicious experience that left everyone inspired with an all-star culinary lineup chef Neal Harden, executive chef of abcV; chef Pithayakorn “Fo” Panapoi of La Dong; pastry chef Oksana Chepoy of Flore Café; and mixologist Chompon “Boong” Boonnak of Mahaniyom! Every course building up to the mains, and of course dessert!

HORS D'OEUVRE
Jasmine rice dumpling, strawberry, spicy lemongrass-avocado 

Black sticky rice cake, topped with shrimp flakes, coconut, scallion lard, shallot, black pepper, and fish sauce 

Puffed Riceberry Rice Crisp, Cured Fjord Trout Belly, Ginger-Lime Leaf Vinaigrette, Yuzu Gel, Herbs

COURSES
1st Course: Vietnamese beef tartare with black sticky rice, fermented anchovy, shrimp paste, Vietnamese herbs, and a black tuile.

2nd Course:  Steamed & crispy fried brown rice, fava beans, spring wild mushrooms & herbs, fermented sea rose. 

3rd Course: Poached Fjord Trout, Saffron Dashi, Charred Chestnut Mushroom Conserva, Riceberry Rice Amazake

Dessert - Pandan Hom Mali Rice Pudding Crème Brûlée served with Black Sesame Brittle, Seasonal Berries Compote.
