When you only have 10 minutes to make lunch or dinner… I gotchu😌 If you love Korean cold noodles but don’t always want the spicy gochujang version, this one is for you✨ It’s nutty from the sesame oil, perfectly salty from the soy sauce, refreshing from the cold noodles, and so simple in the best way!

#RECIPE Soy Sauce Cold Noodles (makes 2 servings)

🍜 INGREDIENTS
- 2 Tbsp soy sauce
- 1/2 Tbsp sugar
- 1 tsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp roasted sesame seeds
- 2 Tbsp finely chopped serrano peppe
- 200g somyeon noodles (if you can’t find somyeon, angel hair pasta works as an accessible substitute)
- Crushed roasted seaweed

👩🏻‍🍳 INSTRUCTIONS

In a bowl, mix together the soy sauce, sugar, minced garlic, sesame oil, roasted sesame seeds, and finely chopped serrano pepper. Set the sauce aside while you cook the noodles.

Bring a pot of water to a boil, then add the somyeon noodles. Cook for about 3.5–4 minutes, or according to package instructions. If the water starts to bubble up too much, add a small splash of cold water to bring it back down.

Drain the noodles and rinse them really well under cold water until they feel cold and chewy. Use your hands to gently rub the noodles together while rinsing to remove extra starch. This helps keep them from getting gummy.

Divide the cold noodles between 2 bowls. Spoon the sauce over the noodles and mix. The sauce is meant for 2 servings, but you can use less if you prefer your noodles less saucy.

Top with crushed roasted seaweed, give everything a good mix, and serve right away so the noodles stay chewy. Pair with protein of choice (if ya want).
