Pickled Carrot and Herby Ricotta Tartine ✨ I adore my sourdough bread slicer - if you want the link comment bread slicer and I’ll send it your way!

For the Quick Pickled Carrots: Ribbon your carrots with a mandoline (I used purple and orange carrots!), and pack them in a jar with fresh dill and green peppercorns. Bring equal parts white wine vinegar and water to a boil with a pinch of kosher salt and sugar, pour over the carrots, seal and refrigerate. They’ll be ready in 24 hours! 

To make the tartine, I grabbed a piece of sourdough, smothered ricotta with herbs mixed in, added pickled carrots, more herbs and flaky salt 😇
