My father in law makes the best biscuits and he blessed us with his recipe and all of the tips and tricks to make these perfect every time. Serve them warm with jam or butter and honey! The perfect thing to bake on a Sunday morning.

Makes a dozen biscuits!

Ingredients:
2 cups all purpose flour, plus more dusting surface 
2 tablespoons baking powder 
1 tablespoon granulated sugar
1 teaspoon kosher salt
1/2 teaspoon baking soda 
7 tablespoons ice cold or frozen unsalted butter
1 heavy cup buttermilk (about 1 1/8 cup)

Instructions:
Preheat the oven to 450 degrees and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda. Using the large holes of a box grater, grate the cold or frozen butter directly into the flour mixture. Gently incorporate the butter with your hands until it is evenly distributed and the mixture resembles coarse crumbs.
Pour in the buttermilk and stir with a fork just until a shaggy dough forms. The dough should look dry and scraggly in spots. Don’t overmix!
Turn the dough out onto a lightly floured surface. Gently press it into a rectangle about 1 inch thick. Fold the dough in half, then press it back into a rectangle. Repeat this process 2 more times (3 folds total) to create flaky layers.
Pat the dough into a final 1 inch-thick rectangle. Using a biscuit cutter or the rim of a floured glass, cut straight down into the dough without twisting. Gather any scraps, gently press together and cut additional biscuits.
Place the biscuits on the prepared baking sheet and reduce the oven heat to 425. Bake for 5 minutes, rotate the pan, then bake for another 4–6 minutes, or until the tops are golden brown.
Immediately take the biscuits off the sheet pan so the bottoms stay tender. Serve warm with butter, honey, and/or jam.
