## Caption

🍑 Peach & Arugula Salad | Summer calls for lighter and more refreshing meal. So head to your local farmers market this weekend, get some fresh produce, and add this salad to your menu next week. 

🍑 Salad 
5oz arugula 
2 peaches, sliced 
1/3 cup pecans, chopped and toasted 
Shaved Parm, as much as you’d like 
Salt & pepper 

🍋 Vinaigrette 
1 lemon, juiced 
1/4 cup EVOO
2 tbsp white balsamic vinegar 
1 tsp honey
1/2 tsp Dijon mustard 

Mix all the vinaigrette ingredients in a lidded container, and vigorously shake until emulsified. Then set aside. 

Add all your salad ingredients to a large bowl, and add as much dressing as you’d like. Mix until fully combined. Then taste and adjust seasoning and vinaigrette as needed. 

Plate, and top with a generous amount of freshly grated parm and enjoy!
