2 pounds beef chuck cut into 2-bite sized pieces
6 cups beef stock
80 grams red onions finely minced
400 grams potato cut into small cubes
180 grams carrots cut into obliques
200 grams bell pepper cut into diamonds
18 grams garlic finely minced
65 grams liver spread
30 grams peanut butter
1 bay leaf
2 cups water
2 Tablespoon Tomato paste
1 (15 ounce) Tomato sauce
3 grams black pepper
4 Tablespoon neutral oil for searing
2 Tablespoon kosher salt for seasoning the beef

1. For best results, cut the beef into 2-bite sized pieces before seasoning with kosher salt. Let it sit overnight. Or you can season right before you sear the meat.
2. Pre-heat your pot on medium heat for a minute.
3. add the neutral oil and sear the beef on both sides until it has a deep brown color. This intensifies the beef flavor of the dish.
4. set the beef aside and with the same pot, sauté the onions and garlic until it gets a nice brown color. Almost caramelized. 
5. Add the tomato paste and sauté for 2 minutes.
6. Deglaze the pan with the beef stock and bring it to a simmer. Keep simmering until the stock has been reduced to a fourth of its original volume. 
7. Add the seared beef from earlier, tomato sauce, bay leaf, liver spread, black pepper and peanut butter and let it simmer on low heat until the beef is tender. Should take around 2 hours. 
8. In the 1 hour and 30 minute mark, add the potatoes. 
9. Once the beef is tender, add the bell peppers and carrots. Cook for an additional 10-15 minutes. 
10. Best served with steamed white rice.
