Ep.6 Korean Fried Chicken Sandwich

Ingredients:
Boneless & Skinless Chicken Thighs
Burger Buns

Batter:
½ Cup Potato Starch
¼ Cup All Purpose Flour
1 tsp Baking Soda
2 eggs
1 Cup Water

Seasoned Flour:
1 Cup Potato Starch
½ Cup All Purpose Flour
2 Tsp Baking Soda
2 Tbsp Chicken Powder
2 Tsp Garlic Powder
½ Tsp Paprika
1 pinch of salt
1 Tsp Black Pepper

Sauce:
1.5 Tbsp Garlic Paste
1.5 Tbsp Ginger Paste
½ Cup Ketchup
½ Cup Honey
2 Tsp Soy Sauce
1 Tsp Kosher Salt
2 Tbsp Gochujang
1 tsp Sesame Oil

Slaw:
2 tsp sugar
1/4 Cup Rice vinegar
1/2 Cup Olive oil
1 Cup Chopped cabbage & carrots
1/4 cup chopped kimchi (optional)

1. Preheat your oil to 320°F (160°C).
2. Sauté the ginger and garlic paste for 1 minute, or until fragrant, making sure not to burn it. Add the remaining sauce ingredients (except the sesame oil) and let it simmer for 3 more minutes. Turn off the heat, stir in the sesame oil, and set aside.
3. Season the chicken thighs generously with salt.
4. Prepare your batter and seasoned flour in separate bowls.
5. Dredge the chicken thighs in the seasoned flour, dip them into the batter, then coat them once more in the seasoned flour. Make sure each piece is evenly and fully coated for maximum crispiness.
6. Fry the chicken at 320°F (160°C) for 7 minutes, or until golden brown and cooked through.
7. Brush the fried chicken generously with the sauce.
8. Make the slaw by combining all of the listed slaw ingredients together.
9. Toast the buns, assemble the sandwiches, and serve.
