Ep. 2: Cheeseburger “Baklava”
Savory. Buttery. Crispy layers. All the flavors of a cheeseburger… wrapped in phyllo and baked like baklava.
Makes 1 (9x13) pan
Ingredients:2 lbs ground beef
½ yellow onion, finely diced
½ cup diced dill picklesAmerican cheese, to taste (slices or shredded)
1 Tbsp garlic powder
1 Tbsp onion powder
2 tsp black pepper1 Tbsp kosher salt (or to taste)
Pinch of sugar
Phyllo sheets (2 sleeves)
1½ cups melted butter
Sesame seeds, for garnish

Instructions:
1. Preheat oven to 350°F.
2. Brown beef over high heat until deeply caramelized. Season with salt, pepper, garlic powder, onion powder, and a pinch of sugar. Drain excess fat.
3. In the same pan, sauté onions until soft and lightly golden. Return beef to pan. Fold in diced pickles and cheese. Mix until melted and cohesive. Let cool slightly before layering.
4. Brush a 9x13 pan generously with butter.
Lay down the first sleeve of phyllo sheets. You can butter each layer individually or place the full stack and evenly pour about ¾ cup melted butter over it. The goal is fully hydrated, glossy layers.
Spread cheeseburger filling evenly. Add another layer of cheese.
Top with second sleeve of phyllo and repeat the butter process.
5. Using a sharp knife, cut into diamonds before baking. Sprinkle sesame seeds on top for that burger bun vibe.
6. Bake 45–60 minutes until deeply golden and crisp. If browning too fast, tent loosely with foil.
Rest at least 15 minutes before serving so the layers set.
Best served with burger sauce for dipping.
Crispy like baklava.Savory like a smashburger.Unhinged? Maybe. Delicious? Absolutely.
