## Caption

Kare-kare pot pie — rich, comforting, and made with intention.
Food scraps from recipe testing go straight into my mill food recycler, helping keep waste out of the trash while I cook.

Ingredients
Kare-Kare Filling
* 2 lbs beef chuck steak, cut into large chunks
* Salt & black pepper, to taste
* 5 cloves garlic, minced
* ½ yellow onion, diced
* 2 Tbsp annatto powder
* 2 cups water or beef stock
* 1 beef bouillon cube (if using water)
* 1 cup peanut butter
* 1–2 Tbsp toasted rice flour (for thickening)
* 1 Tbsp brown sugar
* Salt & pepper, to taste
Vegetables (pre-cooked)
* 1 bunch bok choy, steamed
* ½ cup eggplant, steamed
* ½ cup green beans, steamed
* 1 cup potatoes, boiled
For Assembly
* Puff pastry
* Egg wash (1 egg beaten with a splash of water)

Instructions
1. Sear the Beef Season the chuck steak generously with salt and pepper. Sear in a hot pan until well browned on all sides. Remove and set aside.
2. Build the Base In the same pan, sauté the onion and garlic until fragrant. Add the annatto powder and toast for about 1 minute to bloom the color and flavor.
3. Braise Return the beef to the pan. Add water or beef stock (and bouillon cube if using water). Bring to a simmer, cover, and braise for about 2 hours, or until the beef is fork-tender.
4. Prep the Veggies While the beef cooks, toast the rice flour in a dry pan until lightly golden. Steam the bok choy, eggplant, and green beans. Cook the potatoes until tender.
5. Finish the Kare-Kare Once the beef is tender, stir in the peanut butter, brown sugar, and toasted rice flour. Mix until thick and smooth. Gently fold in the cooked vegetables and season to taste.
6. Assemble the Pot Pie Transfer the kare-kare filling to an oven-safe dish. Cover with puff pastry, sealing the edges. Score the top to release steam and brush with egg wash.
7. Bake Bake at 400°F (205°C) for 15–20 minutes, or until the pastry is puffed and deeply golden.
8. Serve Let rest briefly before serving. Crack through the pastry and enjoy.
