## Caption

Ultimate Garlic Rice
Crispy golden garlic chips and fragrant garlic oil transform simple day-old rice into the ultimate side dish. Perfect for pairing with silog breakfasts, grilled meats, or enjoyed on its own.
Ingredients
* 2 whole garlic bulbs
* 3 cups day-old cooked rice
* 2 cups neutral oil (canola, vegetable, or grapeseed)
* Kosher salt, to taste
* Freshly ground black pepper, to taste

Instructions
1. Prepare the Garlic Chips & Oil
 * Peel and finely mince (or thinly slice) the garlic cloves.
 * Place garlic in a pan with cold oil. Heat gently over low flame, stirring occasionally, until garlic turns light golden brown.
 * Immediately strain to prevent burning. Spread garlic on paper towels and let cool completely until crisp. Reserve the infused garlic oil.
2. Fry the Rice
 * In a clean pan or wok, heat 3–4 tablespoons of the garlic oil.
 * Add the day-old rice, breaking up clumps, and stir-fry until heated through and lightly toasted.
 * Season with salt and pepper, then mix in a handful of the garlic chips for crunch and aroma.
3. Finish & Serve
 * Transfer to a serving dish and top generously with the remaining garlic chips.
 * Serve hot as a flavorful side to your favorite Filipino dishes.
