## Caption

Instant Ramen Chow Mein
Serves: 4 Prep Time: 15 minutes Cook Time: 20 minutes

Ingredients
Chicken & Vegetables
	•	2 lbs chicken thighs, cut into cubes
	•	2 packs instant ramen (any flavor)
	•	1 large carrot, thinly sliced
	•	1 bell pepper, cut into squares
	•	½ medium onion, diced
	•	1 broccoli crown, cut into florets
Seasoning for Chicken
	•	2 tsp kosher salt
	•	1 tbsp garlic powder
	•	2 tsp black pepper
Sauce
	•	3 cups water
	•	Seasoning packets from ramen packs
	•	2 tsp cornstarch + 2 tsp water (slurry)
	•	Optional: 1–2 tsp sugar and extra pepper
For Frying Noodles
	•	2 tbsp neutral oil

Instructions
	1	Prep the Veggies Slice carrot thinly. Cut bell pepper and onion into chunks. Break broccoli into florets and steam in the microwave for 3 minutes or blanch in boiling water for 2 minutes until bright green. Shock in cold water to keep crisp.
	2	Cook the Chicken Season chicken with salt, garlic powder, and pepper. Heat a pan or wok over medium-high, add oil, and cook chicken for 5–6 minutes until browned and fully cooked. Transfer to a plate.
	3	Cook the Vegetables In the same pan, sauté onion for 1 minute. Add carrot and cook 4–5 minutes until slightly tender. Add bell pepper and cook 2 minutes more. Toss in broccoli and remove from heat. Combine with chicken.
	4	Prepare the Noodles Cook ramen according to package directions (discard or reserve seasoning). Drain well. In a clean pan, heat 2 tbsp oil. Spread noodles evenly and fry 3–4 minutes until golden and crisp. Flip carefully and cook the other side.
	5	Make the Sauce In a saucepan, combine 3 cups water with the ramen seasoning packets. Taste and adjust—add water if too salty, sugar if needed, and black pepper for extra flavor. Stir in the cornstarch slurry, bring to a boil, and cook until slightly thickened.
	6	Assemble On a serving plate, lay the crispy noodles as the base. Top with chicken and vegetables, then pour the sauce generously over everything.
