Ingredients

Chicken & Skewers
	•	2–3 lbs boneless chicken thighs, cut into quarters (skin-on if possible)
	•	Wooden skewers, soaked in water for at least 2 hours

BBQ Marinade
	•	1 cup ketchup (banana or tomato)
	•	½ cup soy sauce
	•	¼ cup calamansi juice (or lemon/lime juice)
	•	½ cup Sprite or 7Up
	•	8 cloves garlic, minced
	•	1 tsp garlic powder
	•	1 tbsp freshly ground black pepper
	•	1 tsp kosher salt

BBQ Glaze
	•	1 cup ketchup
	•	1 tbsp soy sauce
	•	2 tbsp (30 g) brown sugar
	•	3 cloves garlic, minced
	•	1 tsp black pepper
	•	1 tsp kosher salt

Instructions
	1.	Marinate the Chicken
In a large bowl or resealable bag, mix all marinade ingredients until well combined. Add the chicken and coat evenly. Cover and refrigerate overnight for maximum flavor.
	2.	Prepare the Skewers
Thread chicken pieces tightly onto soaked skewers, tucking the skin around the meat to protect it from drying out. Pack pieces closely to keep them juicy during grilling.
	3.	Make the Glaze
In a small bowl, whisk together all glaze ingredients until smooth. No need to pre-cook—this will caramelize on the grill.
	4.	Grill the Chicken
Preheat grill to medium heat. Arrange skewers and cook for 12–15 minutes, turning every 4–5 minutes until nearly cooked through.
	5.	Glaze & Finish
Increase heat to medium-high. Brush skewers generously with glaze and grill 1–2 minutes per side, letting the glaze bubble and caramelize. For deeper flavor, brush a second coat just before serving.
	6.	Serve
Serve hot with steamed or garlic fried rice, plus Filipino spiced vinegar (sawsawan) for dipping.
