## Caption

Turon (Filipino Banana Spring Rolls)
Ingredients
* 4 ripe (but firm) saba bananas or plantains
* 1 cup ripe jackfruit strips (langka)
* 12–16 spring roll wrappers
* Oil for frying (enough for shallow or deep frying)
* ½–¾ cup brown sugar (for coating)
Cornstarch Slurry (for sealing)
* 1 tsp cornstarch
* 1 tsp water

Instructions
1. Prepare the Filling
 * Peel and cut the plantains into quarters lengthwise.
 * Cut jackfruit into thin strips.
2. Assemble the Turon
 * Place two spring roll wrappers overlapping at the pointed ends to create a longer sheet.
 * Position one plantain quarter at the lower edge of the wrapper, lay jackfruit strips on top.
 * Fold the bottom over the filling, then fold in the sides, rolling tightly.
 * Seal the tip with cornstarch slurry. Repeat with remaining wrappers and filling.
3. Fry the Turon
 * Heat oil to 350°F (175°C).
 * Shallow fry: 2 minutes per side until golden brown.
 * Deep fry: 3 minutes total until evenly golden.
 * Transfer to a wire rack or paper towel to drain excess oil.
4. Caramelize the Sugar Coating
 * With the oil still at 350°F, carefully sprinkle brown sugar into the hot oil.
 * Let it melt and bubble for about 1 minute, then gently roll each turon in the caramelized sugar until evenly coated.
 * Return to the rack to cool and allow the sugar shell to harden.
5. Serve
 * Let cool for a few minutes before serving—sugar coating will be hot. Enjoy crisp and fresh!
