Ep. 3 Filipino Adobo Wings
Crispy fried wings tossed in a sweet-savory adobo glaze — a bold Filipino twist on classic wings.

Ingredients
Chicken:
* 1.5 lbs (680g) chicken wings
* Kosher salt, black pepper, garlic powder (to taste)
Batter: IB: qqquang 
* 1 egg
* 1/3 cup (80ml) water
* 1/4 cup (30g) all-purpose flour
Breading:
* 1 cup (120g) all-purpose flour
* 1/4 cup (30g) cornstarch
* 2 tsp black pepper
* 2 tsp garlic powder
* 2 tsp onion powder
* 1/2 tsp paprika
* 1/2 tsp kosher salt
* 1.5 Tbsp chicken powder
Adobo Glaze:
* 150 ml white vinegar
* 75 ml soy sauce
* 25 ml dark soy sauce
* 100 ml water
* 1 bay leaf
* 3 garlic cloves, smashed or roughly chopped
* 1/4 medium onion, large diced
* 1 Tbsp black pepper (or to taste)
* 1.5 tsp sugar
* Salt to taste
Cornstarch Slurry:
* 2 Tbsp water
* 1 Tbsp cornstarch

Instructions
1. Make the Adobo Glaze: Heat a pan over medium-high. Sauté onions for 1–2 minutes until slightly caramelized, then add garlic and cook for another minute. Season with a pinch of salt. Add the water to deglaze, then stir in vinegar, soy sauces, bay leaf, pepper, sugar, and salt. Simmer for 3–4 minutes. Add cornstarch slurry and bring to a boil until thickened. Set aside.
2. Prep the Batter & Breading: In one bowl, mix egg, water, and flour for the batter. In another, combine all breading ingredients.
3. Prepare the Wings: Pat wings dry and season with salt, pepper, and garlic powder. Dredge in plain flour, dip in batter, then coat in seasoned flour—pressing firmly to help it stick. Deep-fry at 350°F (175°C) for 10 minutes, or until golden and cooked through. Let drain on a wire rack.
4. Toss & Serve: While hot, toss the wings in the adobo glaze. Serve immediately—best with white rice.
