Ep.27 BBLT 2.0 – Bacon, Billionaire-style, with Tomato Jam

Ingredients:
For the Sandwich:
* Bread of your choice (toasted if you like)
* Thick-cut bacon
* Lettuce
* Fresh tomato slices (optional)
* Mayonnaise (or your preferred spread)
Billionaire Bacon Seasoning:
* 1/4 cup brown sugar
* 1/2 tsp cayenne pepper
* 1 tsp black pepper
* 1 tbsp everything bagel seasoning
Tomato Jam:
* 1 lb ripe tomatoes, chopped
* 1 tbsp vinegar (apple cider, balsamic or white) 
I used denigris1889usa Balsamic Vinegar
* 1 tsp minced ginger
* 1/2 tsp ground cinnamon
* 1/4 cup brown sugar
* 1 tsp kosher salt
* 1 whole clove

Instructions:
1. Make the Billionaire Bacon:
In a small bowl, combine brown sugar, cayenne, black pepper, and everything bagel seasoning. Lay your bacon on a wire rack over a baking sheet. Generously season one side with the mix. Bake at 350°F for 25–30 minutes, or until caramelized and crispy.
2. Prepare the Tomato Jam:
Add chopped tomatoes, vinegar, ginger, cinnamon, brown sugar, salt, and clove to a saucepan. Simmer over medium heat, stirring occasionally, until the mixture reduces to a thick, jam-like consistency (about 10-15 minutes). Remove the clove before using.
3. Assemble Your BBLT:
Toast your bread if desired. Spread with mayo, then layer with fresh lettuce, tomato slices, tomato jam, and the billionaire bacon. Press together and serve.
4. Enjoy the upgrade. This isn’t just a BLT—it’s a BBLT 2.0.
