首度受邀來到高雄銀昇客座的銀座傳奇壽司Hakkoku，讓人終於明白東京人為何甘願等待數月。

被譽為東京最難預約壽司店之一的Hakkoku，沒有浮誇表演，也不追求獵奇食材，饕客追求的是主廚佐藤博之的靈魂一貫。

從鮪魚、赤醋飯到握製節奏，每一貫都講究恰到好處的平衡。這次在熱愛鮨文化、高雄銀昇日籍主理人阪根嘉代，耗時一年力邀、策劃下，佐藤博之特地來台，更帶來招牌開場「突先」、與最具代表性的鮪魚三重奏，讓人一窺這間東京傳奇壽司餐廳的奧秘之處。
