Vegan Poke Bowl Recipe

Ingredients:
- 5 cups chopped watermelon
- 5 tablespoons coconut aminos
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame seed oil 
- 3 tablespoons maple syrup
- Juice of 1 lime
- 1 tablespoon fresh ginger, grated
- 2 tablespoons toasted sesame seed oil 
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped scallions
- 1/2 teaspoon crushed red pepper

Instructions:

1. Prepare the Watermelon: In a large bowl, gently combine the chopped watermelon and set aside.

2. Make the Dressing: In a separate small bowl, whisk together the coconut aminos, rice vinegar, 1 tablespoon of toasted sesame seeds, maple syrup, lime juice, grated ginger, cilantro, chopped scallions, and crushed red pepper. Mix until well combined. 

3. Chill the Dressing: Cover the dressing and refrigerate for 30 minutes to 1 hour to allow the flavors to meld. This process is optional 

4. Prepare the Base: While the dressing chills, prepare your poke bowl base. In another bowl, layer cooked rice, avocado slices, red onion, cucumber, cherry tomatoes, and additional scallions. Set aside.

5. Assemble the Bowl: Once the dressing is ready, remove it from the refrigerator. Pour the watermelon mixture over the rice base and drizzle with the chilled dressing. 

6. Garnish and Serve:
