Paddy Boy and I did some cooking in the kitchen and made one of their favorite things to eat.  Any time a recipe involves chicken cutlets, the squad is all in.  We used the hot honey that he and I made last week so build a delicious hot honey sauce to drizzle on top of these cornflake coated baked  chicken breasts. 
Also, you know these are killer good when I make Patrick dance 🕺 🕺
I’ve also done Hot Honey Shrimp before on my IG. Same exact technique just using butterflied shrimp instead

Baked Hot Honey Chicken

8 thin chicken  breasts 1 cup all purpose flour  1/2 tsp salt 
1/2 tsp black pepper
1/2 tsp oregano
1/2 tsp smoked paprika  ½ tsp garlic powder
 3 eggs 
3 tbls Franks hot sauce 
 6 cups cornflakes crushed 
2 tbls vegetable oil (or any neutral  oil you want) 
Hot honey sauce:
1 cup hot honey (recipe below) or just regular honey if you prefer  2 tbls Franks hot sauce (add more depending on what you heat tolerance is)  3 tbls  butter 1/2 tsp smoked paprika 1/2 tsp garlic powder

Preheat oven to 400F. 
Spray a Sheetpan  with olive oil spray. 
Get 3 bowls for the dredging station. In the first combine the flour with the seasonings.  In the second beat the eggs with the hot sauce.  In the third add the crushed cornflakes which have been tossed with the oil 
 First coat the chicken breasts in the flour then the eggs and lastly the cornflake crumbs.  Make sure there is a good coating on each one.  Lay them down in one layer on the Sheetpan.  Spray them with more olive oil spray and bake for 25 minutes or until cooked through. 

Meanwhile make the hot honey sauce.  Mix everything together in a small pot and simply warm it up until it’s all mixed.  Remove from heat. 
When the chicken is done, drizzle the sauce over.  These are terrific stuffed into a sandwich or on their own.  My kids love it when I serve them with mashed potatoes.
