¾ lb (340g) large shrimp, shell-on
1½ lbs (680g) mussels, cleaned and debearded

Rice

1¼ cups Calasparra rice
3½ cups homemade shrimp stock
½ tsp saffron threads

Sofrito

3 tbsp extra virgin olive oil
1 small onion, finely grated
4 cloves garlic, minced
2 ripe tomatoes, grated
1 tsp sweet Spanish paprika
Salt

Garnish

1 roasted red bell pepper, peeled and sliced into strips
1 lemon, cut into wedges
