For the beef

12 oz (340 g) beef chuck
½ small onion, halved
1 small carrot, chopped
Small piece of parsnip
1 celery stalk
1 bay leaf
2 allspice berries
3 black peppercorns
½ tsp salt
About 4 cups water

For the sauce

1 tbsp butter
1 tbsp flour
2 cups reserved beef broth
½ cup tomato purée/passata
1 tbsp tomato paste
1–2 tbsp sugar
1 tsp vinegar
Salt to taste

Bread Dumplings (Makes 1 log)

1 cup (125 g) all-purpose flour
½ tsp instant yeast
½ tsp sugar
¼ tsp salt
⅓ cup (80 ml) warm milk
1 small egg yolk
½ cup stale bread cubes
