1 whole beef tenderloin roast, 4.8lbs
2 tsp kosher salt
1 tsp black pepper
1 tbsp neutral oil
4 tbsp butter
2 sprigs rosemary
4 cloves garlic

Roast Potatoes

4 lb russet potatoes
2 tbsp kosher salt (for boiling water)
duck fat, all of it

Yorkshire Puddings

Batter

4 large eggs
1 cup whole milk
1 cup all-purpose flour
½ tsp salt

For the tins

2 tbsp neutral oil

Vegetables

Carrots & Broccolini

1 lb carrots
1 lb broccolini
2 tbsp olive oil
Salt and pepper

Gravy

2 tbsp pan drippings
2 tbsp flour
2 cups beef stock
splash of wine
shallot
Salt and pepper
