Trying out a few recipes before Father’s Day… these were truly out of this world and very easy to make. IB: thejoshelkin 

Pineapple BBQ Ribs

Rub:
½ cup sugar
½ cup non-iodized salt
¼ cup brown sugar
2 tbsp chili powder
2 tbsp cumin
1 tbsp paprika
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
Barbecue sauce 

Remove the membrane from 3 lbs pork back ribs and coat generously with the rub. Refrigerate for 2 hours or overnight.

Cut the top off 1 pineapple, trim off the skin, and coat with BBQ sauce. Wrap and pin the ribs around the pineapple.

Smoker/BBQ
• Smoke at 225°F for 3 hours
• Spritz with a 50/50 mix of apple cider vinegar and orange juice, then wrap tightly in foil
• Cook 2 more hours at 225°F
• Unwrap, brush heavily with BBQ sauce
• Increase heat to 275°F and cook 45 minutes until caramelized

Oven
• Place on a rack over a baking sheet and bake at 225°F for 3 hours
• Spritz with a 50/50 mix of apple cider vinegar and orange juice, then wrap tightly in foil
• Bake 2 more hours at 225°F
• Unwrap, brush heavily with BBQ sauce
• Increase oven to 275°F and bake 45 minutes until glazed and tender

Rest 10 minutes, slice, garnish with green onions, and serve. #bbq #ribs #fathersday #grilling #smoker
