Blueberry Ricotta Basil No-Churn Ice Cream

Yield: 8 servings
Prep Time: 20 minutes
Freeze Time: 6 hours

Ingredients

Blueberry Balsamic Swirl

* 2 cups frozen blueberries
* 2 tbsp honey
* 1 tbsp balsamic vinegar

Ice Cream Base

* 1 cup whole milk ricotta
* 12-15 fresh basil leaves
* 1 (14 oz) can sweetened condensed milk
* 2 cups heavy cream, cold divided

Instructions

1. Make the blueberry swirl
1. Combine the frozen blueberries, honey, and balsamic vinegar in a small saucepan.
2. Cook over medium heat for 8-10 minutes, stirring occasionally, until the berries soften and the mixture becomes thick and jammy.
3. Let cool completely before using.
2. Make the basil ricotta mixture
1. In a blender, combine the ricotta, 1/2 cup heavy cream, and basil leaves.
2. Blend until completely smooth and pale green.
3. Whip the cream
1. In a large bowl, whip the remaining 1 1/2 cups heavy cream until stiff peaks form.
2. Add the sweetened condensed milk and whisk to combine.
3. Gently fold the ricotta mixture into the whipped cream until fully incorporated.
5. Assemble
1. Spread one-third of the ice cream mixture into a loaf pan.
2. Spoon over some of the blueberry balsamic compote.
3. Repeat the layers two more times.
4. Swirl gently with a knife.
6. Freeze
1. Cover and freeze for at least 6 hours or overnight.
