Cool off this summer with this Hugo Spritz Granita. ✨🍋‍🟩

Mint Simple Syrup:
-1/2 cup water
-1/2 cup sugar
-8-10 mint leaves

1. Bring water and sugar to a simmer, then cook until sugar is completely dissolved
2. Allow to cool, then set aside

Granita:
-3/4 cup elderflower liqueur
-1/2 cup lime juice
-1/2 cup prepared mint syrup
-1 cup prosecco
-zest from 1 lime

1. Combine all ingredients in a pan and mix. Freeze for 4 hours, then scrape with a fork.
2. Scoop into a glass, then garnish with a lime slice and fresh mint
