1 lb chicken thighs, cut into bite-sized pieces

Trinity

1 large onion, diced
1 green bell pepper, diced
2 celery stalks, diced
4 cloves garlic, minced

Rice & Stock

2 cups long-grain white rice
4 cups chicken stock

Seasonings

2 tsp kosher salt
1 tsp black pepper
1 tsp paprika
½ tsp cayenne
1 tsp dried thyme
2 bay leaves

Fat

2 tbsp oil

Cornbread 

Ingredients

1 cup yellow cornmeal
½ cup all-purpose flour
1 tsp salt
1 tsp baking powder
¼ tsp baking soda
1 egg
1 cup buttermilk
2 tbsp melted ghee
1 tbsp beef tallow (for skillet)
