High protein, veggie packed sandwich I have been making recently: tuna salad sandwich with veggies and a lemony white bean cottage cheese spread. I blended breakstones cottage cheese with white beans, lemon and parsley until smooth and spread on ciabatta bread. Then I made a quick tuna salad with more cottage cheese, mayo, capers, red onion, and lemon juice. Add roasted artichokes, red pepper and arugula and you have this absolutely delicious summer veggie sandwich.
