You’ve heard of Petite Fours, but have you heard of of “Petite Fleurs”? 💐✨ it’s Midsummer, The Summer Solstice, Litha, the longest day of the year! A time to celebrate! Enjoy beautiful fruit, flowers, and sun! This lemon cake, strawberry jam, and buttercream packed flower is the perfect way!! I used Canterbury Bells, Hollyhocks, and Balloon Flowers! Each have a mild flower taste that just adds to the sweetness of the filling. Cake recipe below! Lemon Cake
1 ½ cups of flour
¼ tsp of Baking Soda
¼ tsp of Baking Powder
¼ tsp of Salt
Zest of 2 lemons
Juice of 1 lemon
½ cup of buttermilk (room temp)
¼ cup of preferred oil (vegetable, coconut, olive, etc.)
¼ cup sweet cream butter (softened)
½ cup of granulated sugar
½ cup of light brown sugar (firmly packed)
2 tsp of vanilla
2 eggs (room temp)
Preheat the oven to 350°. Grease a loaf pan.
In a medium bowl combine of flour, baking powder, baking soda & salt. In a small bowl combine the zest and juice of the lemons with the buttermilk. Set aside.
Cream together the oil and sugar until lighter and fluffy. Add in the vanilla. Add the eggs in one at a time. After the eggs are added, make sure there aren’t any unmixed bits of butter and sugar. Add the buttermilk and flour mixtures to your oil & sugar mixture by alternating between flour and buttermilk until both are gone. Mix until evenly distributed. Pour the batter into your greased pan and bake for about 30-35 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Allow the cake to cool for a minimum of 1 hour. Slice the cake and use a small round cookie cutter to make enough mini cakes to add to your flowers. Reserve the rest of the cake to have plain or with icing and jam as well.
