## Caption

My viral crispy kimchi rice paper dumplings are back and better than ever!!! Crispy on the outside, so  satisfyingly chewy from the rice paper, and filled with the juiciest savory kimchi filling. A flavor and texture explosion to say the least✨

Choose ONE protein:
- 1/2 lb ground pork
- 1/2 lb ground beef
- 1/2 lb ground chicken
- 2 cans tuna, drained well
- 1 block extra-firm tofu, pressed and crumbled

Filling + wrappers: 
- 2 cups loosely packed green cabbage, finely chopped
- 1 small carrot, julienned or finely diced
- 1 cup fermented kimchi, chopped + lightly squeezed
- 1 tbsp soy sauce
- 1 tbsp gochujang, optional
- 1 tsp sesame oil
- black pepper, to taste
- 2 green onions, thinly sliced
- 1 egg, beaten
- 16 rice paper wrappers (makes 8 rice paper dumplings total)
- room temperature water
- avocado oil or neutral oil, for pan-frying (I like getgraza)

HOW TO MAKE

1. Cook your protein with cabbage, carrot, and kimchi until the protein is fully cooked through and the vegetables have softened.

2. Add soy sauce, sesame oil, gochujang, black pepper, and green onions. Cook 1–2 minutes, until moist but not watery.

3. Turn off heat and mix in beaten egg. Let cool slightly.

4. Lightly oil a cutting board or parchment paper.

5. Dip 1 rice paper wrapper in room temp water for 3–5 seconds. Lay it down and wait about 10 seconds until bendy.

6. Add one ice cream scoop or generous heaping spoonful of filling to the center. Shape into a rectangle, then fold into a flat pocket.

7. Double-wrap with a second softened rice paper wrapper to make it sturdier.

8. Pan-fry seam-side down in a nonstick pan with a thin, even layer of oil for 4–6 minutes per side, or until golden and crispy.

Serve right away while crispy-chewy and ENJOY!!
