wonton wrappers 🤝 noodles

云吞皮, literally “wonton skin,” has been the secret ingredient to a silky, bouncy texture in Chinese cooking for centuries. This deconstructed bowl delivers all the flavors and textures of traditional wontons. No wonton folding skills required. On the table in under 30 minutes.
 
Ingredients:
1/2 pack dumpling wrappers, separated (about 15-20 sheets)
1 tbsp vegetable oil 
1/2 lb ground pork 
1/2 cup green onions
1 tbsp coarse grated ginger 
2 cups bok choy, loose chopped
Sauce:
3 tbsp cup ponzu 
2 tbsp sesame oil 
2 tbsp chili crisp 
2 tbsp water 
2 tbsp soy 
1 tbsp sugar 
1/2 tbsp black vinegar 
1 tsp fish sauce
Instructions:
1. Separate the dumpling wrappers so they are no longer stuck together.
2. Place a large frying pan over medium heat. Add vegetable oil. 
3. Add ground pork, diced green onions, and grated ginger to the pan. Cook, breaking up the pork with a spatula, for about 6–7 minutes, or until the pork is browned.
4. Once the pork is cooked, add all of the sauce ingredients to the pan and stir to combine. Then, add chopped bok choy to the pan.
5. Turn the heat down to low and let the mixture simmer, stirring occasionally.
6. While the pan simmers, bring a large pot of water to a boil. 
7. Add the dumpling wrappers one at a time, stirring constantly to prevent sticking. 
8. Cook the wrappers for about 2 minutes, or until tender.
9. Strain and place in ice water to stop cooking and help prevent sticking.
10. Add the dumpling wrappers to the pan. Gently toss everything together with a spatula to avoiding breaking the wrappers.
11. Top with chili crisp and enjoy.
