Makes 2 servings⁣
1-2 english cucumbers (depends how big!)⁣
1 lb salmon⁣
1 tb coconut aminos (or low sodium soy sauce)⁣
2 tb kewpie mayo⁣
2 tb sriracha⁣
1 tb rice vinegar⁣
2 tb low sodium soy sauce⁣
1 1/2 cups cooked sticky rice (or jasmine rice)⁣
1 tb rice vinegar⁣
Garnishes: sriracha, avocado, furikake⁣
⁣
Turn your broiler on high. Add salmon to a baking sheet and brush with coconut aminos. Place the tray on the middle rack and broil for 8-9 minutes until cooked through. Remove from oven and shred the salmon with two forks and set aside to cool. Next, mix the rice vinegar into the rice and set aside. After that, prep the cucumber. Slice as shown in the video, scoop out the inside. Fill with the rice, pressing it down firmly into the cucumber and set aside. Once the salmon has cooled, mix in the kewpie mayo, sriracha, soy sauce and rice vinegar. Stir to incorporate everything well. Now carefully scoop some of the salmon on top of the rice. Carefully cut into pieces. Line up your cucumber bites onto a plate and add your garnishes—sriracha, avocado, and furikake. Enjoy!⁣
