Yorkshire Batter

3 large eggs
¾ cup (180ml) whole milk
¾ cup (95g) all-purpose flour
½ tsp kosher salt
1 tsp Dijon mustard

Cheesy Chunky Broccoli Mash

1½ lbs (680g) Yukon Gold potatoes, peeled and chunked
1 large head broccoli, cut into florets
2 tbsp butter
¼ cup milk or cream
4 oz (115g) mature cheddar, grated
Salt and black pepper
Small pinch nutmeg
