This reaction happens when a super saturated solution of sodium acetate is introduced to something that creates a nucleation site (area for crystals to start forming). The result is this insane crystal formation that actually gives off quite a bit of heat (exothermic reaction). This reaction (and chemicals) are actually the same ones used in store bought hand warmers! -
