30-minute dinners that use up leftovers 🔥 I’m a sucker for anything buffalo flavored & this combo is one of the best things I’ve made lately. GF, high-protein & such a good way to clean out the fridge!! Leftover rice, chicken, veggies & a homemade greek yogurt ranch come together for an easy, craveable dinner 👏🏻 

3 bell peppers, halved lengthwise and seeded
2 cups shredded cooked chicken
1.5 cups cooked white rice
1/2 cup Frank’s RedHot
2 tablespoons cream cheese, softened
2 green onions, chopped
1/3 cup shredded pepper jack or mozzarella cheese, plus more for topping
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon both salt and black 
Fresh chives or parsley, for topping

Greek yogurt ranch:
1 cups plain Greek yogurt
1 tablespoon lemon juice
1 tablespoons green onion or chives, finely chopped
1 teaspoons garlic powder
1 teaspoon fresh drill, chopped (can sub dried)
1/2 teaspoons onion powder
Tiny drizzle of honey
Salt and pepper to taste, start with ½ teaspoon each
1-2 tablespoons water, if needed to thin

1. Preheat oven to 400F. Place pepper halves cut-side up in a 9x13 baking dish. Drizzle lightly with olive oil and roast for 15 minutes while you prep the filling and ranch - you want them slightly softened but still holding shape!
2. Prep the ranch by adding all ingredients into a small bowl or mason jar, stir until well combined. Taste and adjust any seasonings, then refrigerate until ready to serve. 
3. In a large bowl, make the filling by adding chicken, rice, cream cheese, green onion, rice, Franks RedHot, shredded cheese, seasonings and mix together until evenly coasted and creamy.
4. Remove peppers from oven, packing in a generous amount of buffalo filling to each half. Top with extra cheese, then bake for another 15-17 minutes until filling is hot, cheese is melted, and pepper are fully tender.
5. To serve, sprinkle with parsley and drizzle over greek yogurt ranch. Add extra hot sauce if you want more heat, then enjoy! Leftovers keep in the fridge for up to 3 days.
