Truly one of the most incredible sandwiches I’ve ever had and the best part is you can make it at home too! Order yourself some Eat.CampoGrande (the Wagyu of pork and they’re not lying) and the rest of the ingredients are below! You’re going to LOVE this one!

For the Secreto
-Secreto pork (Campo Grande necessary, seems like an ad but it’s simply elite)
-Kosher salt
-1 fresh lemon

For the Pan con Tomate
-Demi-baguette (french bread)
-2 Roma tomatoes
-1 garlic clove
-Extra virgin olive oil
-Pinch of salt (flaky or coarse)

For the Greens
-A handful of collard greens, sliced thin (roll the leaves like a cigar to cut)
-Drizzle of olive oil
-Few drops of lemon juice
-Pinch of salt

To Finish
-Fresh Manchego cheese, microplaned

Instructions
1. Prepare the Collard Greens
	1.	Slice the collard greens as thinly as possible, almost like krinkle paper
	2.	Toss lightly with olive oil, a few drops of fresh lemon juice, and a pinch of salt
	3.	Set aside

2. Cook the Secreto
	1.	Heat a cast iron skillet over high heat until very hot
	2.	Season the secreto generously with kosher salt 
	3.	Sear hard on both sides (2-3 minutes each side)
	4.	Remove from the pan and immediately finish with fresh squeezed lemon juice
	5.	Let rest for 5 minutes

3. Make the Pan con Tomate
	1.	Slice the demi-baguette and lightly toast the cut sides face-down in the secreto fat until crisp and golden
	2.	Rub the toasted bread with fresh garlic
	3.	Drizzle (or paint) with high-quality olive oil
	4.	Using the cut side of the Roma tomatoes, press and smear the tomato directly into the bread until the surface is coated but not soaked
	5.	Finish with a small pinch of salt

4. Assemble
	1.	Layer the sliced secreto onto the prepared bread
	2.	Top with the dressed collard greens
	3.	Finish generously with freshly microplaned Manchego cheese
	4.	Close the sandwich and serve immediately while the bread is still warm and crisp #blondeswhoeat #campogrande #homecooking #dallasfoodie
