Mystery Burrito Series by the boyfriend!! His #jambalaya is to die for… here’s his recipe!!

Ingredients ⬇️
Chicken thighs (6-8)
Red and green bell pepper (1 each)
Celery (4 stalks)
Onion (1/2 onion)
Garlic (3 cloves)
Andouille sausage
Roma tomatoes
Paprika (1 1/12 tsp)
Oregano (1/2 tsp)
Thyme (1/2 tsp)
Cayenne (1/4 tsp)
Salt (1/4 tsp)
Pepper
Jasmine rice (2 cups)
Chicken broth (32oz)

Recipe ⬇️
-Chop onion, bell peppers, celery (the “holy trinity” Cajun cooking) and garlic
-Blanch and peel tomatoes, then coarsely chop (reserve)
-Slice andouille sausage into bite size pieces 
-Season chicken thigh with salt, pepper and paprika
-Sauté andouille sausage in a Dutch oven until brown and slightly crisped, then remove and reserve
-Lightly brown the chicken thighs and remove
-Cut chicken into bite size pieces (it will not be fully cooked yet)
-Add the “holy trinity” and garlic to the Dutch oven and sauté 
-Add in the chicken and andouille 
-Add rice
-Add chicken broth, enough to cover the ingredients (roughly 3 to 4 cups)
-Add seasoning
-Bring to a boil, cover and place in oven on 400 for 15 minutes
-Check after 15 minutes and stir and place in oven, checking and stirring every 5 minutes until cooking for about 25-30 minutes
-Serve! (Great with a fresh squeeze of lime) #blondeswhoeat #burrito #jambalaya #homecooked
