I have an abundance of herbs right now in the garden. My oregano has quite literally taken over half of one of my 16ft long garden beds, so I am always looking for fun new ways to use it. This Herbed Garden Marmalade is unexpected and delicious beyond any other marmalade I’ve made. It’s bright, it’s acidic, it’s sweet, it’s savory, it’s everything you could imagine and more! If you’re looking to absolutely wow your friends, family, guests, etc. I’d try this. It’s excellent with cream cheese or over a savory sweet combo like sweetened cornbread! It would also make a great gift tucked in a basket with fresh herbs and freshly picked vegetables.
Herbed Garden Marmalade Recipe: Yield: about 5 half-pint jars 1 ½ pounds tomatoes (about 3 to 5 medium) 2 teaspoons slivered lemon peel (about 1 small) 1 clove garlic, minced 1 tablespoon minced fresh basil 1 tablespoon minced fresh oregano 6 tablespoonsBall Classic Pectin ¼ cup bottled lemon juice 4 ½ cups sugar
PREP: Wash tomatoes, lemon, basil, and oregano under cold running water; drain. To peel tomatoes, blanch 30 to 60 seconds in boiling water. Immediately transfer to cold water. Remove peel. Core and seed the tomatoes. Chop tomatoes into 4-to/2-inch pieces. Measure 3 cups chopped tomatoes. Cut only the yellow portion of peel from lemon using a vegetable peeler. Cut peel into slivers; measure 2 teaspoons slivered peel. Mince basil and oregano separately. Measure 1 tablespoon minced basil and 1 tablespoon minced oregano.
