As someone who used to say veg biryani isn’t the real deal, this recipe is 100% the exception for me especially when you follow my mom’s tips to make that restaurant-style paneer biryani at home. This is an easy paneer biryani, so really comes down to a few steps and boils down to marinated paneer layered over par-cooked rice with fried onions, cilantro and mint, then sealed and steamed the classic dum way (except we’re using aluminum foil to keep things simpler) A few tips that make this stovetop paneer dum biryani foolproof: Taste at all times! This is a simple recipe but each step builds in a new layer of flavor. The marinade and the broth should both should taste a touch saltier than you want the final dish.  Pull the rice at 80% cooked. It finishes steaming during the dum, so undercook it slightly or it goes mushy. You also want to use a long basmati rice Seal the pot tight with foil and a lid because that trapped steam is the whole secret to getting the texture and flavor distribution just right After cooking, turn off the heat and DO NOT open for 10 minutes. Let it rest, then fluff and serve with raita. When picking the paneer, pick something that doesn’t crumble super easily.
