Coconut Salmon with Fresh Mango Salsa Recipe
 
Salmon Ingredients: 
• 1 salmon filet 
• 1 tbsp Harmless Harvest Organic Coconut Water 
• Garlic powder 
• Paprika 
• Salt  
• Pepper 
• 2 tbsp breadcrumbs 
• 3 tbsp shredded coconut 
 
Fresh Mango Salsa Ingredients: 
• ¼ cup tomato 
• ½ a jalapeño 
• 3 tbsp red onion 
• ½ cup mango 
• 2 tbsp cilantro 
• 1.5 tbsp lime juice 
• 2 tbsp Harmless Harvest Organic Coconut Water 
• Pinch of salt 
 
Avocado Crema Ingredients: 
• ½ avocado 
• ¼ cup of cilantro 
• 2 garlic cloves 
• ½ lime juice 
• 2 tbsp sour cream 
• ½ tsp salt 
• ¼ tsp cumin 
• Pinch of black pepper 
• 3 tbsp water  
  
Instructions: 
1. Coat salmon with a little oil and coconut water and then add a heavy pinch of spices. 
2. Mix breadcrumbs, coconut, and a bit more of spices. Press salmon into mixture on each side until it’s fully coated. Air fry at 400° F for 8 minutes. 
3. Chop fresh mango salsa ingredients and mix in a bowl. 
4. Blend avocado crema ingredients together until smooth and creamy. 
5. Top salmon with avocado crema and fresh mango salsa. Enjoy!
