Coconut Tres Leches Flag Cake 🇺🇸 The ultimate patriotic dessert for the 4th of July! 

Ingredients

Cake

* 1 cup all-purpose flour
* 1½ tsp baking powder
* ¼ tsp salt
* 5 large eggs, separated
* 1 cup granulated sugar, divided (¾ cup + ¼ cup)
* ⅓ cup whole milk
* 1½ tsp vanilla extract

Coconut Tres Leches Soak

* 1 (14 oz) can sweetened condensed milk
* 1 (12 oz) can evaporated milk
* 1 (13.5 oz) can full-fat coconut milk
* ½ cup heavy whipping cream
* 1 tsp vanilla extract

Whipped Topping

* 2 cups heavy whipping cream
* ¼ cup powdered sugar
* ½ tsp vanilla extract

Toppings

* ½ cup sweetened coconut flakes (toast half if desired)
* Fresh blueberries
* Sliced strawberries
* Raspberries

Instructions

1. Preheat the oven to 350°F. In a bowl, whisk together the flour, baking powder, and salt.
2. Beat the egg yolks with ¾ cup sugar until pale and fluffy. Mix in the milk and vanilla. In a separate bowl, beat the egg whites to soft peaks, gradually add the remaining ¼ cup sugar, and continue beating until stiff peaks form. Gently fold the egg whites into the yolk mixture, then carefully fold in the dry ingredients.
3. Butter a 9x13-inch baking dish, pour in the batter, and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
4. Whisk together the sweetened condensed milk, evaporated milk, coconut milk, heavy cream, and vanilla. Once the cake has cooled slightly, poke holes all over with a fork or skewer and slowly pour the coconut tres leches mixture over the cake. Refrigerate for at least 3-4 hours, or overnight for best results.
5. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread evenly over the chilled cake.
6. Sprinkle the whipped topping with the toasted coconut flakes. Arrange 5 rows of 6 blueberries in the top left corner to create the stars, then make the stripes by alternating rows of sliced strawberries and raspberries, leaving white whipped cream between each row for the flag design.
